2021 Agricultural Hall of Fame inductee Dr Graham Crosbie is a pioneer of the WA noodle wheat industry.

This week’s West Aussie Great was central to its development as a viable farming product here in the west through clever innovation.

He has helped develop – among other things – the delicious wheat noodle that is still unique to WA.

“We managed to develop a very useful test that helped us select for this character, to give us the right texture,” he told Gareth Parker on 6PR Breakfast.

“Noodles are categorised by their texture and colour, and in those respects the Japanese are very particular.

“We had a succession of specialists from Japan come and work with us so that we could make noodles and judge their suitability well.”
