COOKING METHOD
- SEAL SHANKS IN HOT PAN WITH OIL AND CLARIFIED BUTTER.
- SET THEM ASIDE.
- IN THE SAME PAN, SAUTE SOME ONION, GARLIC, GINGER AND ORANGE ZEST UNTIL IT STARTS TO COLOUR.
- ADD SOME DRY SPICE, SOME FRESH CHERRY TOMATOES AND CHICPEAS
- ADD A GLASS OF FRESHLY SQUEEZED ORANGE JUICE AND LET THIS SIMMER AND REDUCE
- 500 MLS OF BEEF STOCK THEN PLACE THE BEEF SHANKS INTO A BAKING DISH, COVER WITH THIS WONDERFUL GARNISH.
- COVER WITH BAKING PAPER AND FOIL AND BAKE IN OVEN FOR 6 HOURS @130 DEGS.
